Well, as you know I spent the past week in South Carolina. It was supposed to be our first family vacation on the beach. I was eager to focus on time with my family, daily exercise on the beach, and delicious seafood meals. It was the perfect concoction for anyone's mental health. Unfortunately it was one of the most stressful vacations I hope I never take again. I was anxious about the long drive with our 9 month old son but he was angel both ways. Our saving grace included two things: one of us sitting in the back playing with him and if he got really fussy popping in a DVD (lol, the only children's movie we own is Rudolph the Red-Nosed Reindeer; which he loved but if I never have to see it again I'll be grateful!). I did, however, walk for 90 minutes with my husband and son on the beach every morning which was lovely and peaceful. My son loves to go on walks which is an added bonus. The week began with my son in Urgent Care due to the after-math of a horrible virus he had the previous week with a 104 fever that continued for several days. He had a runny nose which led to pink-eye and an ear infection. We were on a pretty remote island but thankfully they did have an Urgent Care! That apparently was foreshadowing for much worse to come which I will continue to describe in the next several days...I've never been so happy to be back home!!!!

Salad (mixed greens, tomatoes, peppers, onion) 2 tbsp. light ranch
